  1. Heat 1 tsp oil in a pan on medium heat.
    Add chopped onions and sauté until soft and translucent.
    Add chopped tomatoes and cashews.
    Cook until tomatoes turn soft and mushy.
    Turn off heat and let it cool.
    Blend into a smooth paste.
    Heat 2 tbsp butter in a pan.
    Add ginger-garlic paste and sauté for 1 minute.
    Add the prepared tomato-onion paste.
    Cook on medium-low heat until oil separates from the mixture.
    Add turmeric powder, red chili powder, and coriander powder.
    Mix well and cook for 2–3 minutes on low heat.
    Add fresh cream and mix gently.
    Add paneer cubes.
    Stir carefully to avoid breaking the paneer.
    Add garam masala and salt to taste.
    Crush kasuri methi and add to the gravy.
    Simmer on low heat for 3–5 minutes.

Notes

  • Use fresh and soft paneer for the best texture.
    Soak paneer cubes in warm water for 5–10 minutes if they are hard.
    Do not overcook paneer, as it can become rubbery and chewy
    Cook the gravy until oil separates to get a rich and authentic flavor.
    Always add cream on low heat to prevent curdling.
