- Heat 1 tbsp oil in a pan on medium heat.
- Add chopped onions and sauté until soft and translucent.
- Add chopped tomatoes and cashews.
- Cook until tomatoes turn soft and mushy.
- Turn off heat and let it cool.
- Blend into a smooth paste.
- Heat 2 tbsp butter in a pan.
- Add ginger-garlic paste and sauté for 1 minute.
- Add the prepared tomato-onion paste.
- Cook on medium-low heat until oil separates from the mixture.
- Add turmeric powder, red chili powder, and coriander powder.
- Mix well and cook for 2–3 minutes on low heat.
- Add fresh cream and mix gently.
- Add paneer cubes.
- Stir carefully to avoid breaking the paneer.
- Add garam masala and salt to taste.
- Crush kasuri methi and add to the gravy.
- Simmer on low heat for 3–5 minutes.
